Most grocery stores, or big Warehouses like Costcom have plastic bags in the Meat, Poultry, and Fish depts for customers---that is a good way to keep the leaking bags of blood from getting on to the veggies, and other items.

If proper procedures are followed, there is no contamination of meat with the contents of the animals' (or peoples') colon. But that requires very careful handling of all parts of the animals and people and adds to cost. SO, in the absence of regulations and enforcement, no telling what is in the meat. The reason ground meat is such a problem is that there is a lot of surface area potentially exposed to the bacteria AND it is stored for a relatively long time, giving the bacteria ample opportunity to multiply AND this ground meat is often not cooked thoroughly, so we are exposed. E.coli is ubiquitous in nature, and can not be entierly irradicated from raw meat and produce items even with sanitary slaughtering/processing conditions. Ensuring that a sample of ground meat is pathogen free only ensures that that specific sample taken was without pathogens. So protect yourself and your loved ones and cook your hamburgers medium well! I love medium rare burgers too but I would not serve them to people that are susceptible to serious E.coli infections: young, elderly, and the immuno-compromised. Cook your burger well, all E. coli will be destroyed, and enjoy a safe delicious hamburger!

Hate to break it to ya but we were all only partially free from most bacteria when we were in the womb. Once you pop out your first birthday gift is bacteria (usually the bad kind). Then we gradually develop our own little suckers that help us make Vit. K and actually protect us from other pathogens that try to hurt us.
Newborn babies are born without Vit. K...so they have to be supplemented with it. If they are not they WILL NOT BE ABLE TO CLOT THEIR BLOOD!

I'm not saying you can't get these things without meat, but its a lot harder to do.
It's an healthy lifestyle choice for sure, but not everyone is ready to take that step. Most definitely, I am not. I'm practically a carnivore. How about the beef industry quits feeding cattle corn, which is incredibly unhealthy for them and causes them to be sicker and have far higher appearances of these e-coli in their gut. Grassfed cattle are healthier both for them and for us, also the idea of feeding an animal something that you know makes it sick is just cruel. Just because were going to eat them doesn't mean we have to be monsters about it.
Yes, you can get protein from other sources, but their are many different types of proteins. Not all are as beneficial in your diet as others.And humans have developed with the inclusion of animal and plant proteins in their diet.
If all beef cattle were grass fed, carnivores would make a huge stink. Beef would be much more expensive, less plentiful, and it tends to have less marbling (read: it can be less juicy depending on how it's cooked).
If you want REAL LEAN meat. You want beefaloe , or wild game . That's why if your hunting. Don't have the guy that burns sausages cook your food. Unless, you like eating something as tough as the soles of your shoes.

The marbling is from fat caused by eating corn. Sure it tastes good--but so does lard. I wish we could keep our meat more natural--grass fed, as meant by nature. Maybe we wouldn't have that explosion of heart attacks in this country as we do.

Industry against it? Up to this point, recalls were mainly voluntary! Contaminated meat is already out into the marketplace, hence "recall". On the other hand, upto 99% of poultry is contaminated already by Campylobacter and/or Salmonella. Introduce the UV light and irradation of these products and render them safe? E. Coli is naturally occurring. It lives in the intestine of every living animal, including humans. If you didn't have certain forms of bacteria living inside of you, you would die. We have a symbiotic relationship with many microscopic organisms.
Edward and Farmer are correct. The problem comes from poor sanitation in meat processing facilities. And also from high density feed lots, where cows are knee deep in feces (no joke), and they are covered with poo when they go to slaughter. When the outside of your animals are covered in feces, you can bet there will be contamination in the meat.
the meatpackers lobby will have to go back to the lab, and create different strains of e. Coli. just like chasing the synthetic psychedelic drug makers, they twitch the ear of their latest mindfreak and call it legal again. never mind that it kills.

E. coli is only "naturally occuring" in the meat supply when meat processing facilities are being sloppy. E. coli is naturally occurring in a cow's (and a human's) digestive tract, but not necessarily in muscle tissue.

Amswink, You are absolutely right, there should be NO E. coli of any strain in any meat! If proper procedures are followed, there is no contamination of meat with the contents of the animals' (or peoples') colon. But that requires very careful handling of all parts of the animals and people and adds to cost. SO, in the absence of regulations and enforcement, no telling what is in the meat. The reason ground meat is such a problem is that there is a lot of surface area potentially exposed to the bacteria AND it is stored for a relatively long time, giving the bacteria ample opportunity to multiply AND this ground meat is often not cooked thoroughly, so we are exposed. YUCK, YUCK, YUCK!

It is because we cook our meat that we have not evolved sufficiently to survive raw meat. In order for evolution to be effective in insuring that humans are immune from ecoli and other raw meat bacteria contamination, most of the population would have to die from eating contaminated raw meat before coming of reproductive age over several generations. Be thankful for government regulations because the nose test is not sufficiently precise to prevent the death of our children.

Really? Have you ever observed operations on a kill-floor? Mostly-sterile environments? Now I know you've never even been in a meat-packing facility. Ever watch them make hamburger? The scrap meat is shoveled into an auger. Any meat that falls out get's shoveled up off the floor and back into the auger...and some of that meat's been hanging around for a few days. By the way, do you know where the E. Coli comes from? Intestines. Now how exactly would contents of intestine get into the meat...in many cases...it is the meat!

1. The non-0157E is naturally occurring. So...we shouldn't ban it's occurrence in our food?
2. The government can make products safe by banning a pathogen? No...but if the company doesn't test or sells the product knowing it's contaminated...they violated the law and maybe the CEO can go to prison. How's that for making a product safe?
3. I'm sure illegalizing a pathogen to make a product safe is not supported by science...neither is selling a product you know is tainted or untested.

E.coli is ubiquitous in nature, and can not be entierly irradicated from raw meat and produce items even with sanitary slaughtering/processing conditions. Ensuring that a sample of ground meat is pathogen free only ensures that that specific sample taken was without pathogens. So protect yourself and your loved ones and cook your hamburgers medium well! I love medium rare burgers too but I would not serve them to people that are susceptible to serious E.coli infections: young, elderly, and the immuno-compromised. Cook your burger well, all E. coli will be destroyed, and enjoy a safe delicious hamburger!
